Giveaway Winner / Easy Dinner


I don't know about you, but I am always looking for new, fresh, easy dinners to make.

This is one we really like: couscous with grilled chicken, shredded carrots, spinach, raisins, and toasted pine nuts. We just cooked up the chicken (on our grill pan, marinated with a fresh garlic/olive oil concoction) and the couscous (according to instructions on the bag). Then we threw everything together in a bowl along with some olive oil, lemon juice, salt, and cracked pepper. It was great as leftovers, too.

something that we've made that is relatively easy is chicken enchilada casserole with black bean salsa on the side. it's delicious and done in 30 minutes.

that sounds delicious. does it have cream in it, though? kirk can't eat creamy things... he gets sick.

well, you use cream of chicken soup for the base when cooking the chicken and chiles together. i imagine you could recreate the same taste and texture using a different ingredient. lots of cheese instead? is it the dairy or the texture?

both :). although, he loves pizza so much, that he'll take a lactaid and eat it anyways...don't think this recipe would work for him, though.i also just remembered that he doesn't like enchilada sauce. oh well.

hmm...bummer. we also do a simple salmon dinner, where i just broil a filet and make some rice and a green veggie. then, i shred some ginger root and pour some soy sauce in it. i use the ginger sauce as a tasty sauce to drizzle over my fish and veggies. it's so good that my mouth waters when i think of it.

that sounds good. i'll have to try it. do you put the sauce on after everything is cooked?

yes, you can. i usually put the ginger sauce in a sort of dipping or condiment dish. then, when i serve it everyone can dish out as much sauce as they want. pete likes to drench his, and i like to lightly dip or coat.
