I love homemade food. The kind that's made from scratch from whole ingredients. But with a business and a baby, I don't have a lot of time to cook. So I like to make big batches of things that can keep in the fridge or freezer for a while and heat up for quick weekday meals. My latest kick is cooking up a big batch of steel cut oats for the week. Each day, I just scoop some out of the pot, microwave it for a few minutes, and then add a few toppings to make it interesting. My go-to recipe is to add a whole cup of frozen mixed berries, a splash of milk, and a spoonful of brown sugar. Here are some of the other combinations I've enjoyed:
+ shredded apple, cinnamon, brown sugar
+ almond butter, chopped almonds, honey
+ sliced banana, apricot preserves, sliced almonds
+ chocolate chips, coconut milk, shredded coconut
+ maple syrup, cinnamon, raisins, chopped pecans, butter
+ fresh chopped mango, toasted shredded coconut, coconut milk, honey

what great combinations! i need to remember some of these, when i make oatmeal next.
Sometimes (like this morning) instead of adding these kinds of toppings to oatmeal, I add them to plain greek yogurt. Today, it was shredded apple, shredded (unsweetened) coconut, sliced almonds, and honey. Very yummy.
I can't believe I just learned about steel cut oats a month ago (and I'm 42!). They're my newest addiction.
I keep seeing oatmeal recipes that make me really want to eat some, and I DO love it, but every morning I am so excited to eat my cereal that I never eat any oatmeal! And I know that it would keep me fuller for longer than the cereal does too dang it! I love all your concoctions, I may have to finally just do it. oh and making a pot for the whole week is a great idea!
Katie- Yes, you should try it! I used to be like that with cereal, too. But recently, I've become bored with cereal, so I've been branching out with oatmeal, greek yogurt, eggs, toast, etc... A great thing about oatmeal is that you can buy it in bulk and it's so cheap! (Although I suppose the toppings can get pricey, depending on what you use.)
